Is it possible tu use sql queries to create Physical Datasets?

I’m aware of this option [Dremio](https://docs.dremio.com/software/acceleration/offloading-operational-databases/)
but its not enough, I do need to copy the sources table from other sql sources. The source database have updates on its lines and I would lose history if I just cache views on top of it

If you are trying to make an existing dataset queryable in Dremio, then you need to promote it using: [Dremio](https://docs.dremio.com/software/sql-reference/sql-commands/datasets/#managing-physical-datasets)

Otherwise, if you are trying to create tables and load data, then you can use this: [Dremio](https://docs.dremio.com/software/sql-reference/sql-commands/apache-iceberg-tables/apache-iceberg-create/)
