Actually, I was informed that you can pass these parameters to Dremio on startup.
In values.yaml under the coordinator spec, try adding:
extraStartParams: >-
-Ddremio.debug.sysopt.dremio.iceberg.enabled=true
-Ddremio.debug.sysopt.dremio.execution.support_unlimited_splits=true
